3/4 c. sugar
1/2 c. oil
1 egg
2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda
1 tsp. milk
1 c. chocolate chips
1 tsp. vanilla
Nuts (optional)
Dissolve baking soda in milk; set aside. In large bowl add pumpkin, sugar, oil, and egg; stir. Add flour, baking powder, cinnamon, salt and baking soda mixture. Mix well. Stir in chocolate chips and vanilla. Spoon onto cookie sheet. Bake at 375 degrees 10 to 12 minutes or until done.
ANDY’S MOZZA MEATBALLS
Pre-heat oven to 400
Mix all ingredients except mozzarella.
1 pound beef or turkey
1 cup dry Italian seasoned crumbs (you may add more if you think the mixture is too moist).
½ cup milk or cream.
1 teaspoon salt
1 teaspoon Worcestershire sauce
½ teaspoon pepper
Add Italian seasoning to your taste. (I like Emril’s Italian Seasoning the best).
3 eggs
Low moisture mozzarella
Cut the mozza into ½” squares, and wrap the meat mix around the cheese and make a ball that is about 1 ½”- 2” thick. Makes about 20 meatballs. Bake uncovered 20 to 25 minutes
